We have our hands recently on Penfolds Bin 707 Cabarnet Sauvignon. Its one of Penfolds finest quality expression wine. Produce with intensely-flavored fruit, when the grapes of the highest quality. It is the Grange (Shiraz) counterpart in Cabarnet Sauvignion . Its only produce when its carefully selected grapes has reached its highest quality. Source carefully from a multi-vineyard and multi-region. It was first vintaged in 1964.
It is 100% Cabarnet Sauvignon. Matured 16 months in 100% new American oak hogsheads.
Vineyard region are mostly from Adelaide Hills, Barossa Valley, Wrattonbully, Coonawarra.
The aromas are Lifted scents of marmalade and citrus varietally flirt with sundried tomato/red capsicum. Rosemary glaze; florals/perfume arise with air.
To the Palate: Classy, youthful. Irish fruit-cake mix – rich and generous, alongside dark chocolate, old gold rum and raisin impression.
100% new oak all but absorbed, and at one with wine. Black olive and a suggestion of graphite.
Solid and complex no overt varietal or regional assertion.
Excellent length and balance.
Bin 707 retains a secure place among the ranks of Australia’s finest Cabernets.
